The Caballero family are legendary in Honduras – for generations they’ve been producing exceptional coffee around the town of San Isidro, Santa Ana, in western Honduras, close to the border with El Salvador.  

It’s arguably an understatement to say, Fabio Caballero Jr, has coffee in his blood. He is the 5th generation of the Caballero family to produce coffee and based on what we’ve tasted so far – he\'s got a long, and successful career ahead of him.  

After graduating from university, Fabio began managing some of his family’s farms and in 2019, founded Finca La Salvaje with his grandfather, the legendary Don Fabio Caballero (2018 Honduras COE winner). La Salvaje is planted with Geisha and Java, using seeds from the family\'s COE winning farm, Finca San Francisco.  

The name, La Salvaje (meaning Wild, in Spanish) is a nod to the environment in which the coffee was grown – it\'s an untamed place, filled with birds, native wildlife, and plenty of shade. This coffee was the highest scoring coffee in the 2025 Honduras Cup of Excellence competition, scoring an impressive 91.59 pts (out of 100), and placed 1st in the Exotic category – it was also the highest priced coffee in the subsequent auction, fetching $88.40/lb.  

How to Drink: Just like you wouldn\'t add soda to your best whiskey, this amazing coffee is meant to be drank black with no sugar or cream.
