Natural Process: The oldest method of processing coffee. The coffee cherres are dried in the sun with skin and mucilage intact before depulping, leading to significant changesin flavor, sweetness, and acidity. The process is overall simpler than washed, but to produce high quality natural coffees a lot of monitoring and care is necessary, requiring the constant removal of individual cherries that begin to rot or overferment. The final product is very sweet, and presents distinctive winey flavors and red fruit acidity.



Colombia: Colombian coffee producers are incredibly innovative. In response to decades devastating coffee rust disease, they developed high quality disease-resistant varietals like Colombia and Castillo. As the specialty coffee industry has evolved, they\'ve beenat the forefront inventing delicious new techniques for fermenting coffee, vastly expanding the range of flavors possible in the cup. Coffee from Colombia can\'t be easily generalized, but it\'s particularly famous for malic acidity (think apple & pear), big sweetness, and delicate florals on the aroma.
